the perfect equation…

we have trouble at the dinner table sometimes.
I’m not complaining though…my boys are really good eaters
I mean, “eating me out of house and home” kind of eaters…
but lately, with the blue boy’s molars and the green boy’s leg we’ve seen our fair share of trouble at the table.

We are a one meal at dinner family. Meaning, “this is for dinner and if you don’t like it, you will go to bed hungry” now, you might not do the same and that’s okay…it’s what works for us. The rules have not changed with the mealtime protests, I’ve just started experimenting with our meals. yes, a little scary at times. But I’ve learned something worthwhile in the process…
Here is a little equation I gleaned from experimenting with Jessica Seinfeld's recipes which seems to be a winner at the Wilsons…

sandwiches + waffle maker = happy eaters

that’s it. just get out that waffle maker and press away in a Panini-like manner and you will see some smiles like these at your table…2011-02-02 February 2, 2011 004

you can use any kind of filling for your sandwiches, but here is the recipe I tried from Jessica Seinfeld’s Deceptively Delicious

Waffle Sandwiches
1/2 c nonfat cottage cheese
1/2 c sweet potato puree
1 large egg white
1 tsp packed brown sugar
1/4 tsp salt
8 slices whole wheat bread, crusts removed
1. Preheat waffle maker
2. In a blender or food processor, blend the cottage cheese, sweet potato puree, egg white, brown sugar, and salt. Spread 4 slices of bread with the mixture and top with the remaining slices.
3. Place the sandwiches two at a time in the waffle maker and close the lid. Cook for 2-3 minutes, until the sandwiches hold together and the filling is no longer runny.

”Sweet potato helps to stabilize a kids’ blood sugar levels by providing soluble fiber. And they’re good for skin, eyes, and all over good health because they’re rich in beta carotene and other antioxidants.”

ummm...only if it means you will be a happy eater at the table. I'm sure you cause some serious trouble for Michelle!
